People
The Salvadoreños are very hospitable and helpful. They feel honored that you want to visit their country. They also seem very eager to tell about their area. They don't come across as intrusive.

Safety
El Salvador is known for its murder rate, but as a bicycle tourist you don't have to worry about that. They are gangs who deal with each other. It is best, as for any region, to check what neighborhoods to avoid after sunset. There are many security guards everywhere on the street and at the tourist attractions. But I have not seen any incidents.
Traffic
Outside large cities, there is little crowds. Traffic is mostly bicycle-friendly, with a good distance in between. Primary roads are very good. There is some dirt and things that are not very tire-friendly on the emergency lane along the highway. There are some boulders on unpaved roads, but most roads do have a layer of asphalt, so that a good route can always be mapped out.

Food and drink
Stalls on the street
Many pupuserias, the fast food of El Salvador. Tortilla with filling of your choice.
Restaurants
In simple comedores you have a good and inexpensive meal in the morning and afternoon. The restaurants a la carte are slightly more expensive, but still cheap. Always with rice and tortillas.
Drinkable water
You can buy water in 500ml bags almost everywhere, very cheap and quite handy.
